This is my Best bread-sticks recipe. It was inspired by the breadsticks at a little mom and pop restaurant where I used to work. (though my recipe is entirely different from theirs, both the dough and the garlic butter are my original recipes and have nothing to do with their recipe's for either, the only thing that's the same is the way they are put together, with the breadstick lathered in garlic butter and covered with grated parmesen.)
The dough for this recipe is basically a simple Pizza dough.
1 Tablespoon of active dry yeast
3/4 cup lukewarm water
2 3/4 Cups flour
1 teaspoon of salt
1 tablespoon (or so) Olive oil
This starts just like my pizza recipe: First you'll have to dissolve the yeast in the water (it should be lukewarm). So pour the yeast into the water and let it stand for about 10 minutes or so and it should become foamy on top.
While you wait, stir together the flour and salt and form them into a mountain shape with a big hole in the top. Now, when the yeast mixture is ready, pour it into the hole on top of the mountain and stir with a wooden spoon or fork until a dough forms.
Once your dough has formed, transfer it to a lightly floured work surface and knead it until it becomes smooth and flexible. This will take anywhere from 2 to 10 minutes depending on the dough and your personal strength level. A rolling pin can be very helpful at this stage. Once the dough has been thoroughly kneaded brush the inside of a large bowl with the olive oil and place the dough inside. Cover the bowl with plastic wrap and leave it in a relatively warm place, in the sunlight by a window perhaps. Now you must let the dough rise for about an hour. Once an hour has passed you should see a dramatic change in the dough. It should have just about doubled in size.
Now move the dough to a pan which is either oiled or has parchment paper laid across it. Form it into a long oval shape. Now cut the dough into seven long strips, and then cut the strips in half. Creating a total of 14 short breadsticks. You can skip this step and just make seven long breadsticks, but they can be harder to eat that way. In either case, bake them at 400 degrees for about 5 minutes, adding about one minute at a time if they require longer. Now as your breadsticks are baking you can get to the garlic butter!
This garlic butter should be very creamy and has lots of intense flavor.
1/2 cup Butter
3 Teaspoons minced garlic
1 teaspoon oregano
a pinch of basil
a pinch of salt
This is a snap (which is a relief after baking the dough). In a small bowl combine the ingredients. Take a mixer and on the lowest setting begin to blend. Blend until the mixture begins to form a creamy,but slightly chunky substance. Once it has get a spatula and whip it until it becomes creamy and spreadable. The whole process should take less than 5 minutes and you'll have creamy delicious garlic butter ready for your breadsticks!
Now, let the breadsticks cool for about four minutes or your garlic butter will just melt and run onto the pan. Once cooled spread the garlic butter with the spatula over each breadstick one by one. This recipe makes plenty of Garlic butter so spread liberally! Now once you have the garlic butter spread on the breadsticks grab the grated Parmesan. Store bought in a can is actually best for this in my opinion, because it's grated more finely than you can usually do at home. Sprinkle the Parmesan onto the breadsticks so that it covers about 25% to 50% of the surface area, depending on your tastes. The Parmesan adds not only flavor but it's really the key to the breadsticks because of the texture it creates as it sinks into the still warm garlic butter.
